This easy fruit pizza combines a sugar cookie crust with a light and sweet cream cheese frosting, that is sprinkled with fresh fruit.

Ingredients
Sugar Cookie Crust
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg large size
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 3/4 cups all-purpose flour
Cream Cheese Frosting
- 8 ounces cream cheese softened
- 1/4 cup unsalted butter softened
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar
Fruit Topping
- 1/2 cup diced strawberries washed and dried well
- 1/2 cup blueberries washed and dried well
- 1/2 cup blackberries washed and dried well
- 1/2 cup raspberries washed and dried well
- 1/4 cup chopped kiwi approximately 1-2 kiwis
- 8 ounces mandarin oranges drained and patted dry with a paper towel

Instructions
Sugar Cookie Crust
- Preheat oven to 350 degrees F.
- While the oven is preheating, grab a large mixing bowl, and a hand mixer, and beat the butter and sugar together for approximately 2 minutes or until it is light and fluffy. Add the vanilla extract and large egg to this mixture and continue to beat this together for another 30 seconds.
- Next, add the salt, baking powder, and flour, and mix until it’s combined into a dough.
- Press the dough onto a 12" round pizza pan until it’s a nice even layer. Bake the sugar cookie dough in the oven for about 14-16 minutes or until the color of the crust is a light brown. Allow for the crust to cool completely before moving on.
Cream Cheese Frosting and Fruit Topping
- While the crust is cooling, grab another large bowl and a hand mixer and combine the cream cheese and butter until smooth. Add powdered sugar and vanilla extract to this mixture and continue to beat it together until fully combined.
- Once the crust has cooled completely, take a small offset spatula and spread the cream cheese frosting on the sugar cookie crust before decorating. Top with the fruit, then refrigerate until it’s ready to be sliced and served.

- Storage – Once assembled this fruit pizza is really only good for a few days after making. It can be stored in the fridge covered for up to three days. After the first day the crust will absorb a lot of moisture from the fruit and frosting and will become soggy. This dessert does not freeze well unfortunately.
