Description
This one-pot pasta uses uncooked spaghetti simmered in water or broth with halved cherry tomatoes, thinly sliced onion, garlic, fresh basil, olive oil, and seasonings like salt, pepper, red chili flakes, and Italian herbs. Cooking everything together allows the tomatoes to break down and flavor the cooking liquid, infusing the pasta during the 8–10 minute cook.
The result is pasta evenly coated in a fresh, lightly sauced mix with soft tomato and onion textures, accented by aromatic basil and a subtle kick from chili flakes if used. Stirring in Parmesan cheese at the end adds creaminess and umami.
Serving immediately preserves the pasta's tender but not mushy texture and maximizes the fresh taste and vibrant colors. This method requires less preparation and washing up compared to traditional pasta recipes.
Ingredients
- 1 pound spaghetti or linguine pasta
- 4 ½ cups water or stock
- 2 tablespoon olive oil
- 1 onion thinly sliced, large
- 3 ½ cups cherry tomato halved
- 6 cloves garlic sliced
- 1 cup basil loosely packed, torn, fresh
- salt kosher salt, to taste
- black pepper kosher salt, to taste
- 1 teaspoon red chili flakes ignore if you can’t eat spice
- 2 teaspoon Italian seasoning mixed herbs
- ¾ cup Parmesan Cheese grated
Instructions
- Thrown in Spaghetti pasta, halved cherry tomatoes, sliced onions, sliced garlic, torn fresh basil leaves, olive oil, salt, pepper, red chili flakes into your saucepan along with liquid(water or broth). Turn on the flame.
- Bring it to boil, stirring occasionally.
- DO NOT COVER the sauce pan with lid.
- In about 8-10 minutes you have pasta that’s beautifully cooked.
- Turn off flame, stir in Parmesan cheese.
- Serve immediately.
