Sweet and Sour Chicken

Sweet and Sour Sauce

  • ½ cup water
  • ¼ cup seasoned rice vinegar
  • cup light brown sugar packed
  • 3 tablespoons ketchup
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoon cornstarch

Stir Fry

  • 2 tablespoons olive oil divided
  • 1 pound boneless skinless chicken breast cut into bite-sized pieces
  • 1 white onion peeled and chopped
  • 1 red bell pepper seeded and chopped
  • 1 green bell pepper seeded and chopped
  • 20 ounces Canned Pineapple Chunks drained
  • cooked rice for serving

Instructions

  1. Whisk together the water, rice vinegar, brown sugar, ketchup, soy sauce, and cornstarch in a medium bowl. Set aside.
  2. Place a large skillet over medium-high heat. Add 1 tablespoon of oil to the pan. Once hot, cook the chicken pieces until cooked through, about 10 minutes. Transfer the chicken to a bowl and set aside.
  3. To the same skillet, add the other tablespoon of oil. Then add the onion and bell peppers. Cook until the veggies are softened, about 8-10 minutes
  4. Add the pineapple, cooked chicken, and sauce to the skillet. Cook until the sauce thickens to your desired consistency.
  5. Serve warm over cooked rice.
