Ingredients
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 3/4 cups all-purpose flour sifted
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/3 cup water
- 1 cup sweet potatoes cooked and mashed
- 1/2 cup pecans chopped
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease a 9x5-inch loaf pan with nonstick cooking spray or butter.
- In a large mixing bowl, whisk together the granulated sugar and vegetable oil until well combined. Beat in the eggs one at a time until the mixture is smooth.
- In a separate bowl, mix the sifted all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the water, and mix until just combined. Fold in the mashed sweet potatoes and chopped pecans.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Place in the preheated oven and bake for approximately 1 hour, or until a toothpick inserted into the center of the bread comes out clean.
