Sweet Potato Frittata Recipe

This Sweet Potato Frittata combines roasted thinly sliced sweet potatoes with a spiced egg mixture enriched by goat cheese, ginger, garlic, and spinach. The layers create a dish with tender sweet potatoes and a soft, flavorful egg base. The addition of curry powder adds warmth and depth, while chopped almonds provide a pleasant crunch when serving. This dish is suitable for a satisfying breakfast or light meal, offering both vegetable and protein components in one bake.

Description

The Sweet Potato Frittata Recipe starts by roasting thin slices of sweet potato until soft, creating a caramelized and tender base layer. Meanwhile, an aromatically sautéed mixture of onion, garlic, ginger, and wilted spinach forms a flavorful vegetable component. The eggs are whisked with goat cheese, milk, curry powder, and salt to create a rich custard that binds the layers together.

The dish is assembled in layers in an oven-safe pan, starting and ending with sweet potatoes and vegetables, then topped with the spiced egg mixture and dotting of goat cheese before baking. This technique results in a firm yet creamy texture, balancing the earthiness of sweet potato with the tang of goat cheese and the spice of curry powder.

Once baked, the frittata can be garnished with chopped almonds to add a contrasting crunch. It serves well as a nourishing breakfast or brunch item, or even as a light dinner paired with a simple salad.

Ingredients

Servings
  • 1 lb sweet potato thinly sliced
  • 3 teaspoons olive oil divided
  • ¾ teaspoon salt divided, sea salt
  • ½ medium onion minced
  • 1 tablespoon ginger minced
  • 2 cloves garlic finely minced
  • 2 cups spinach
  • 6 large egg
  • ½ cup goat cheese divided
  • ¼ cup milk
  • 2 teaspoons curry powder
  • almond to serve, chopped almonds
  • goat cheese to serve, chopped almonds

Instructions

  1. Preheat your oven to 425 degrees. Line a baking tray with parchment paper. Mix the sweet potato rounds with olive oil and sea salt then arrange them in a single layer. Put them into your oven to roast for 20-25 minutes, or until they are soft.
  2. While the sweet potatoes are cooking, make the rest of the frittata. Heat the remaining teaspoon of olive oil over medium-high heat in an oven-safe pan. Add the onion and cook for 5 minutes, stirring occasionally, until it has begun to brown. Add the garlic and ginger and cook for 30 more seconds. Add the spinach to the pan and let it wilt then transfer the veggies to a bowl.
  3. In a medium-sized bowl, whisk the eggs, half of the goat cheese, milk, curry powder, and the remaining ½ teaspoon of sea salt.
  4. Make a layer of sweet potatoes in the pan used for cooking the veggies. Top it with half of the veggies then make a second layer. Pour the eggs into the pan then dot the remaining ¼ cup of goat cheese on top.
  5. Put the pan into the oven and let it cook for 25 minutes, or until the frittata has puffed up a little and is no longer runny. Remove the pan from the oven and let it rest for 5 minutes. Sprinkle the chopped almonds over the top.
