Ingredients
- ¼ cup soy sauce tamari for gluten free
- ¼ cup ketchup
- 2 tbsp white wine vinegar
- 2 tbsp Sweet chili sauce
- ¼ cup honey
- ½ tsp red pepper flakes
- 1 tbsp fresh ginger grated
- ¼ cup pineapple juice
- 1 tbsp sesame oil
- 1 cup onion diced
- 1 cup bell pepper diced
- 4 cloves garlic minced
- 1 lb boneless, skinless chicken breasts diced
- ½ cup pineapple diced
- 3 cups cooked rice If you don’t already have cooked rice in the refrigerator, start by cooking the rice
Instructions
- In a medium bowl, combine the soy sauce, ketchup, white wine vinegar, sweet chili sauce, honey, red pepper flakes, fresh ginger, and pineapple juice. Set aside.
- Add the sesame oil to a large skillet or wok on the stove over medium-high heat.
- Add the onion and bell pepper, cook 2-3 minutes, add the garlic and chicken, cook for an additional 5-6 minutes.
- Add the pineapple and sweet and sour sauce.
- Simmer to reduce the sauce down slightly for 3-4 minutes, then add the rice and cook for an additional 3-4 minutes.
