This Taco Casserole is loaded with the best taco flavors. It is the best weeknight meal for any family that is looking for a casserole recipe that the entire family will love!

Ingredients
- 2 pounds ground beef
- 2 1 ounce packets taco seasoning
- 1/2 cup water
- 1 15 ounce can black beans, drained and rinsed
- 1 14.5 ounce can diced tomatoes with green chilies, undrained
- 1 1/2 cups chunky salsa
- 2 cups shredded Mexican cheese blend
- 4 cups tortilla chips lightly crushed
- 1 cup sour cream
- 2 green onions thinly sliced
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks, about 8-10 minutes.
- Drain excess fat, then add taco seasoning and 1/2 cup water. Simmer for 2 minutes.
- Stir in black beans, diced tomatoes with chilies, and chunky salsa. Cook for another 2-3 minutes to combine flavors.
- Layer half of the crushed tortilla chips in the bottom of the prepared baking dish.
- Spread half of the beef mixture over the chips.
- Sprinkle 1 cup of shredded cheese over the beef.
- Repeat layers with remaining chips, beef mixture, and cheese.
- Bake uncovered for 25-30 minutes, until the cheese is melted and bubbly.
- Let cool for 5 minutes, then top with dollops of sour cream and sprinkle with sliced green onions before serving. Enjoy!
Notes
- Lightly crushing the chips helps them form a more cohesive layer. Don't pulverize them completely.
- I suggest using mild salsa unless you want a spicy dish.
- Refrigerate any leftovers in an airtight container for up to 5 days.
