Ingredients

  • 4 ounces tamarind paste
  • 1 cup water
  • 1 ½ tablespoons soy sauce
  • ½ teaspoon apple cider vinegar
  • ¼-½ teaspoon cayenne pepper, more if more spice is desired
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground ginger
  • 5 tablespoons brown sugar
  • salt and pepper

Instructions

  1. Add 4 ounces tamarind paste and 1 cup water to a medium saucepan and bring to a rolling boil over medium heat. Boil for about 5 minutes, until it is a thick paste, then remove from the heat and let it cool for a few minutes.
  2. Use a wooden spoon or a stiff spatula to press the tamarind paste through a fine mesh sieve back into the pan. You should have very thick, sticky pulp left in the sieve and smooth tamarind concentrate in the pan.
  3. Stir in 1 ½ tablespoons soy sauce, ½ teaspoon apple cider vinegar, ¼-½ teaspoon cayenne pepper, ¼ teaspoon ground cumin, ¼ teaspoon ground ginger, 5 tablespoons brown sugar, and a little salt and pepperr to the tamarind concentrate. Simmer for 1-2 minutes, or until the sugar is melted and the sauce is your desired thickness. If it becomes too thick, add water one tablespoon at a time until it is where you want it. Taste and adjust the seasonings and sweetness to your liking.
  4. Let the sauce cool before transferring to an airtight container or bottle for storage.
