Tanghulu are Chinese sweets made from candied fruits and put on skewers. The most common are red hawthorn.

Ingredients

  • cup sugar
  • cup water
  • 8 oz. red hawthorns , ripe but firm

Instructions

  1. Wash and dry the fruits thoroughly then stick them on skewers.
  2. In a saucepan, add the sugar and water, mix them and bring to the boil for 5 to 10 minutes.
  3. The syrup should begin to thicken and turn golden or light brown. It must reach 300 F (150°C).
  4. While cooking, prepare a bowl of water with ice cubes.
  5. Dip the fruit skewers one by one into the still hot caramel, taking care to coat the fruit well.
  6. Then immerse them in ice water for a few seconds.

Notes

  • Without a thermometer, it is still possible to test the caramel by dipping a drop in ice water. If it solidifies and turns into a small hard ball, it is ready. Tanghulu are best eaten immediately, without getting burned by the icing, to enjoy the crunch of the caramel. It is possible to prepare the same recipe with other fruits and in the same proportions: strawberries, grapes, raspberries, blackberries, blueberries, blackcurrants, clementines, etc.
