Ingredients

  • ½ tablespoon oil
  • 1 pound (454g) lean ground beef
  • 32 ounces (907g) frozen tater tots 1 bag
  • ¾ cup (190g) Greek yogurt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup (90g) frozen corn
  • ½ cup (75g) frozen peas
  • 1 ½ cups (150g) grated cheddar cheese divided
  • 2 lices Bacon extra crispy and crumbled
  • 1 cup (25g) corn flakes crushed

Instructions

  1. Preheat oven to 400 degrees F / 205 degrees C.
  2. Grease a deep dish casserole pan with spray.
  3. On medium high, heat oil.
  4. Add the ground beef and cook until no longer pink. Drain the fat.
  5. Add greek yogurt, onion powder, garlic powder, salt, pepper and mix well.
  6. Pour beef mixture into the casserole dish and spread evenly throughout the pan.
  7. Add the frozen corn and peas on top.
  8. Sprinkle on 1 cup of cheddar cheese, then place the tater tots on top.
  9. Top with the remaining ½ cup of cheddar cheese, bacon, and corn flakes.
  10. Bake for 30 minutes.

  • Be sure to use a deep casserole dish because each layer of this casserole is pretty substantial. Use the oil or cooking spray to grease the casserole dish. This will prevent the casserole from sticking to the sides and make for easier serving. When cooking the bacon, make it extra crispy.
