Ingredients
Base:
- 1 ounce frozen tater tots
Toppings:
- 1 can 15 ounces black beans, rinsed and drained
- 1 cup corn kernels fresh, frozen, or canned
- 1 Jalapeño thinly sliced (optional)
- ½ cup red onion diced
- 1 cup cheddar cheese shredded
- 1 cup Monterey jack cheese shredded
- ½ cup Pico de Gallo or fresh salsa
- 1 avocado diced
- ¼ cup fresh cilantro chopped
- ¼ cup black olives sliced , optional
- ¼ cup sour cream or Greek yogurt, for drizzling
- Lime wedges for serving
Instructions
- Preheat the oven to 425°F and spread the tater tots on a large baking sheet in a single layer.
- Bake according to package instructions (usually 25-30 minutes) or until crispy and golden, flipping halfway through.
- Once the tater tots are crispy, remove them from the oven and transfer to an oven-safe dish or leave them on the baking sheet.
- Sprinkle the black beans, corn, red onion, and jalapeño evenly over the tater tots.
- Top with shredded cheddar and Monterey Jack cheeses.
- Return the tater tots to the oven and bake for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.
- Remove the tater tots from the oven and immediately top with pico de gallo, diced avocado, and fresh cilantro.
- Sprinkle with black olives, if desired, and drizzle with sour cream or Greek yogurt.
- Serve warm with lime wedges on the side for an extra burst of flavor.
