Teriyaki Chicken Stir Fry

Ingredients

  • 1 ½ pounds chicken breast cut into bite size pieces
  • 2 cups broccoli florets
  • ½ cup chicken broth
  • cup red bell pepper sliced into thin strips
  • ¼ cup yellow onion sliced thin
  • cup Keto Teriyaki Sauce
  • 2 tablespoons sliced almonds toasted
  • 2 tablespoons olive oil
  • 1 tablespoon scallions
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger chopped
  • salt and pepper to taste
  • optional: sesame seeds

Instructions

  1. Heat a large skillet to medium heat. Add in the olive oil, then the chunks of chicken, salt and pepper.
  2. Sauté for a few minutes, making sure to sear all sides.
  3. Remove the chicken and set aside.
  4. Add in the onions and red bell pepper, sauté a few minutes until soft. Add in the garlic and ginger and sauté for about 15 seconds, then pour in the chicken broth.
  5. Add in the broccoli and cook for a few minute until almost cooked through.
  6. Add in the chicken and teriyaki sauce and simmer for another 2 minutes or until cooked through.
  7. Serve with a garnish of the scallions, toasted sliced almonds and (optional) sesame seeds over cauliflower rice or all on it’s own.
  8. Store leftovers in an airtight container in the fridge for a couple of days or freeze.
