Tex Mex Migas

This recipe for Tex Mex-style migas makes a delicious breakfast dish featuring crispy fried tortillas, eggs, vegetables, and spices.

Ingredients

  • 3 tablespoons olive oil
  • 8 corn tortillas cut into eighths
  • 1 Poblano chili seeded and diced
  • 1/2 white onion diced, medium
  • 1 jalapeño stem and seeds removed, finely diced, medium
  • 2 cloves garlic minced
  • 8 egg room temp, large
  • 1/2 teaspoon kosher salt

Optional toppings

  • Pico de Gallo
  • cilantro chopped
  • queso fresco or cheese of choice

Instructions

  1. Stack and cut tortillas. Whisk eggs in a medium bowl and set aside. Heat olive oil in a large skillet over medium-high heat.
  2. Add the corn tortilla pieces to the skillet and fry until crispy, about 6 to 8 minutes. Remove from pan to paper towel lined plate.
  3. Add more oil if needed to skillet and saute the poblano, onion, jalapeno and garlic for 3 minutes. Add the fried tortilla pieces and pour the egg over all.
  4. Cook for about 2 to 3 minutes, folding until migas just start coming together and eggs are fully cooked and are set.
  5. Remove from heat, season to taste. Serve with pico de gallo, chopped cilantro and or cheese of choice on top.
