Thai Chicken Meatballs

Ground chicken blended with fresh flavors (lemongrass, garlic, ginger & cilantro), these chicken meatballs are a great lunch, dinner or party appetizer!

Ingredients

Servings
  • 1 pound ground chicken (or turkey)
  • 1/4 cup onion finely diced
  • 1/2 cup cilantro chopped
  • 2 teaspoons ginger grated
  • 1 teaspoon lemongrass paste
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced very finely
  • 1 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Combine the ingredients (except for oil) in a bowl.
  3. Use a cookie scoop, and roll into small balls in your hands.
  4. In medium skillet, heat oil over medium heat. Add meatballs and brown.
  5. Bake in the oven 8-12 minutes, until fully cooked.
  6. Devour.

Notes

  • Freezing raw meatballs
  • Place on a baking sheet. cover loosely with plastic wrap and freeze several hours. Remove from the baking sheet, and store in a freezer-safe plastic bag. To eat, remove as many meatballs as you need and bake on a baking sheet in the oven at 400 degrees F. You’ll need 10-15 minutes.

  • Allow to cool completely and place on a baking sheet. cover loosely with plastic wrap and freeze several hours. Remove from the baking sheet, and store in a freezer-safe plastic bag. To eat, remove as many meatballs as you need and heat in the microwave until piping hot.
  • Additions/Substitutions
  • Green onion – added along with the cilantro, gives more green and a lovely flavor.
  • Fish sauce or soy sauce – if you’re looking for a little more umami flavor, adding a teaspoon of one or the other will be delicious.
  • Lime juice – I love a little fresh lime in this recipe, it really brightens it up!
