Chicken Thai Noodles made with sauteed chicken, peppers, and a creamy thai sauce. Healthy and flavorful gluten-free dinner that is a family favorite!

Ingredients
- 2 Tablespoons oil
- 1 1/2 lbs. chicken breast (sliced)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup Red, Yellow, and Orange Peppers (sliced)
- 1 cup chicken broth
- 1 Tablespoon fresh ginger (minced)
- 2 Tablespoons Chili garlic sauce
- 1 Tablespoon hoisin sauce
- 1-2 Tablespoons peanut butter
- 6-8 ounces rice noodles
- 2 green onions (thinly sliced)
- cilantro leaves (optional)
- chopped peanuts (optional)

Instructions
- Heat the oil in large skillet over medium high heat.
- Add chicken breast and saute for 4-5 minutes. Sprinkle with salt and pepper. Add peppers. Saute for 6-8 more minutes until chicken is cooked thorough.
- In small bowl, combine chicken broth, ginger, chili garlic sauce, hoisin sauce, and peanut butter. Whisk together.
- Reduce heat to low and add sauce.
- Cook rice noodles according to package instructions.
- Toss noodles with chicken and sauce. Season to taste.
- Top with green onions, cilantro and peanuts (optional).

- *If you want more peanut butter flavor, add 1 more Tablespoon of peanut butter
- * If you want some coconut flavor, add 1/4 - 1/2 cup of canned coconut milk.
