Thai Chicken Noodles

Chicken Thai Noodles made with sauteed chicken, peppers, and a creamy thai sauce. Healthy and flavorful gluten-free dinner that is a family favorite!

Ingredients

  • 2 Tablespoons oil
  • 1 1/2 lbs. chicken breast (sliced)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup Red, Yellow, and Orange Peppers (sliced)
  • 1 cup chicken broth
  • 1 Tablespoon fresh ginger (minced)
  • 2 Tablespoons Chili garlic sauce
  • 1 Tablespoon hoisin sauce
  • 1-2 Tablespoons peanut butter
  • 6-8 ounces rice noodles
  • 2 green onions (thinly sliced)
  • cilantro leaves (optional)
  • chopped peanuts (optional)

Instructions

  1. Heat the oil in large skillet over medium high heat.
  2. Add chicken breast and saute for 4-5 minutes. Sprinkle with salt and pepper. Add peppers. Saute for 6-8 more minutes until chicken is cooked thorough.
  3. In small bowl, combine chicken broth, ginger, chili garlic sauce, hoisin sauce, and peanut butter. Whisk together.
  4. Reduce heat to low and add sauce.
  5. Cook rice noodles according to package instructions.
  6. Toss noodles with chicken and sauce. Season to taste.
  7. Top with green onions, cilantro and peanuts (optional).

Notes

  • *If you want more peanut butter flavor, add 1 more Tablespoon of peanut butter
  • * If you want some coconut flavor, add 1/4 - 1/2 cup of canned coconut milk.
