Thai Chicken Pizza {California Pizza Kitchen Copycat}
Description
The dough is prepared from warm water, sugar, active dry yeast, flour, kosher salt, and olive oil, kneaded and allowed to rise twice to develop a soft yet chewy crust. While the dough rises, chicken breasts marinate in a pre-made peanut sauce to infuse flavor and moisture.
The peanut sauce combines chicken broth, garlic, peanut butter, soy sauce, honey, fresh ginger, and Sriracha for a sauce that is both rich and slightly spicy. This sauce is spread over the rolled-out dough before toppings are added.
After marinating, the chicken is grilled and sliced, then placed over shredded mozzarella on the pizza base. Fresh julienned carrots, bean sprouts, whole peanuts, chopped cilantro, and green onions add crunch, brightness, and herbaceous notes, balancing the richness of the peanut sauce and cheese.
This pizza presents a fusion of Thai flavors with traditional pizza elements, offering a complex profile with creamy, spicy, sweet, and fresh elements in each bite. The recipe notes that the dough freezes well and that store-bought or alternate doughs can be used if preferred.
Ingredients
- 2 chicken breast boneless skinless
- ¾ cup peanut sauce for the marinade, House of Tsang Bangkok brand
Dough
- 1 ½ cups water warm
- 2 tablespoons sugar
- 1 (.25-ounce) packet active dry yeast
- 3 ¾ cup flour
- 1 tablespoon kosher salt
- 3 tablespoons olive oil
Peanut Sauce
- ½ cup chicken broth
- 4 cloves garlic pressed or minced
- 6 tablespoons peanut butter heaping, creamy
- 6 tablespoons soy sauce
- 3 tablespoons honey
- 3 tablespoons ginger fresh, minced
- 2 -4 teaspoons Sriracha sauce to taste
Toppings
- 3 cups mozzarella cheese
- ½ cup carrots julienned
- ½ cup bean sprout
- ½ cup peanuts whole
- ¼ cup cilantro chopped, fresh
- ¼ cup green onion diced
Instructions
- Place chicken in a resealable bag and add Tsang Bangkok Peanut Sauce. Marinate in the refrigerator for at least 1 hour while the dough is prepared and rising. The chicken can also be marinated and grilled ahead of time.
- Prepare pizza dough by combining water, sugar, and yeast in a small bowl. Let sit for 5 minutes.
- Mix flour and salt together in the bowl of a heavy-duty mixer fitted with a dough hook.
- Add oil to the yeast mixture, then pour the yeast mixture into the flour mixture. Knead on low speed for 10 minutes.
- Place dough in a lightly oiled bowl. Turn the dough over a few times to coat the dough with oil. Cover with plastic wrap and let rise in a warm place for 1 hour.
- Punch the dough down and divide in half. Shape into 2 balls. Lightly brush the dough balls with olive oil and return them to the bowl. Cover again with plastic wrap, and let rise another 45 minutes.
- While the dough is rising the second time, stir together all the sauce ingredients in a saucepan and simmer on low heat for 10 minutes. Set aside.
- Once the sauce is prepared, remove the chicken from the refrigerator and discard the excess marinade. Heat the barbecue grill to 400 degrees F. Grill the chicken for 7 minutes on each side, only turning once. Use a meat thermometer to make sure the internal temperature of the chicken reaches 165 degrees F. Allow chicken to sit for 10 minutes, then cut into thin slices.
- Heat oven to 450 degrees F. Light grease a pizza pan or dust it with cornmeal. Take one dough ball and place it in the center of the pizza pan. Using your fingers, pat the dough out from the center to the edge of the pan, with the dough slightly thicker on the rim of the pizza pan.
- Top with dough with prepared peanut sauce, cheese, grilled chicken slices, carrots, bean sprouts, peanuts, cilantro and green onion.
- Bake for 10-15 minutes, until the edges are golden brown.
Notes
- This homemade pizza dough yields two large pizzas and can be frozen for later use; thaw to room temperature before rolling out.
- Marinating chicken in peanut sauce for at least an hour enhances its flavor and moisture.
- Grilling the marinated chicken ahead of time is an option for convenience.
- Alternative pizza crusts, including store-bought or cauliflower crusts, can be used according to preference.
