Thai Fried Rice

Thai fried rice is an easy meal that delivers restaurant-quality flavors!

Ingredients
- 2 eggs
- 2 tablespoons vegetable oil divided
- 1 small onion minced
- 1 cup (140g) boneless skinless chicken breast cubed
- ½ cup (60g) red bell pepper diced
- ½ cup (64g) carrot diced
- 1 teaspoon garlic
- ½ teaspoon ginger
- 1 cup (80g) sweet peas
- 3 tablespoons cashew nuts
- 2 cups (364g) cooked Jasmine rice cooled
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- Sesame seeds and green onions for garnish
Instructions
- Whisk eggs together in a small bowl.
- Heat a large skillet or wok with ½ tablespoon oil. Scramble the eggs, then remove from the pan and set aside.
- Add the rest of the oil and sauté onion, chicken, bell pepper, carrot, garlic, and ginger until tender.
- Add peas, cashew nuts, rice, soy sauce, oyster sauce, and scrambled eggs. Fry on high heat while stirring for one minute.
- Remove and garnish with sesame seeds and green onions.
Notes
- Dice the onion, bell pepper, and carrots into small, uniform pieces so they are evenly distributed.
- Make sure the chicken is cubed in pieces that are the same size so it will cook at the same rate.
- Use a meat thermometer to ensure the internal temperature of the chicken has reached at least 165 degrees F / 74 degrees C before serving.
- Use leftover rice if you have it. Day-old cooked rice is a bit drier and won't go mushy when you fry it.
- For an authentic Thai fried rice street food experience, serve with a fresh lime wedge on the side.
