This Healthy Apple Pecan Crisp is the absolute best fall dessert! It's naturally sweetened with pure maple syrup and is made with the most yummy cinnamon apple mixture, a buttery crunchy oat topping, and is absolutely delicious served with a scoop of vanilla bean ice cream! Plus the best part is it's mad easy to make and perfect for serving for a crowd!

Ingredients
Apples:
- 5 medium red apples (800g) peeled and thinly sliced
- 1/4 cup pure maple syrup (60g)
- 1 Tbsp EACH: cornstarch and lemon juice
- 1 tsp EACH: cinnamon and vanilla
- 1/4 tsp salt
Crisp Topping:
- 1 cup rolled oats (100g)
- 1/2 cup chopped pecans (56g)
- 1/4 cup packed brown sugar
- 1 tsp cinnamon
- 1/4 cup butter (56g) melted
For Serving:
- vanilla ice cream optional (but not really!)

Instructions
- Preheat the oven to 350 degrees F. Spray a 9-inch pie dish or 8x8 dish with cooking spray.
- In a large bowl, add the apples, syrup, cornstarch, lemon juice, cinnamon, vanilla and salt and toss to evenly coat.
- In a medium bowl, add all the topping ingredients and mix with a fork to combine.
- Add the apples to the prepared dish. Then add the crisp topping on top.
- Bake for 40-45 minutes, or until apples are soft and it’s crisped to liking. You can broil for 1-2 minutes to crisp up the top even more, but watch it carefully so it doesn't burn!
- Serve with vanilla ice cream and enjoy!
Notes
- Store leftover apple pecan crisp in an airtight container in the fridge for 3-4 days.
- To prepare and freeze: assemble the apple crisp through step 4 but do not bake it. Cover the crisp well with aluminum foil and transfer it to the freezer for up to 3 months. When ready to eat, take apple crisp out of the freezer and bake the frozen apple crisp at 350 degrees for about an hour or until it’s golden and bubbly.
- To reheat: this apple crisp is best eaten warm, right out of the oven! If you want to reheat leftovers, I recommend reheating in the oven or air fryer. You can use the microwave but the oat topping might turn out soggy/not as crispy.
- To make in advance: prepare it as directed, cover your pan or skillet with foil, place it in the refrigerator and then bake it as directed before you’re ready to serve. Easy!
- The best apples for baking are crisp, firm, sweet-tart and can stand up to the heat of the oven without turning mushy. I used honey crisp apples here because I think they’re perfect for baked apple desserts but you could also use any other variety, like Pink Lady apples, that are good for baking. I do not recommend using Granny Smith apples or other tart apple varieties for this particular recipe.
