  • 1 pound chicken or pork cooked and shredded
  • 1 cup barbecue sauce store-bought or homemade
  • 20-24 tortilla chips
  • 1 cup shredded mexican style cheese
  • 1 cup Pico de Gallo
  • ½ cup guacamole
  • 1 Jalapeño sliced, optional
  • sour cream for dipping, optional

Instructions

  1. Preheat broiler. Lay out tortilla chip scoops on a baking sheet lined with tin foil.
  2. Scoop about a tablespoon of shredded BBQ chicken or pork (or simply bbq sauce) into each one and top each with a good amount of shredded Mexican style cheese blend. Place under broiler for 2-3 minutes; then turn-off broiler and allow to cook until cheese is melted; about 1-2 minutes.
  3. Remove from oven and top with each tostada with pico de gallo and a dollop of guacamole. Sprinkle over cilantro onto the entire tray.
  4. If using jalapeño, place slices on top and serve with sour cream or any additional favorite toppings.
