Description

Ingredients

  • 1 pound roast beef cooked, see recipe notes
  • 3-4 potato baked or boiled
  • salt
  • black pepper
  • 2 pie crust purchased or homemade
  • beef gravy prepared

BEEF GRAVY

  • drippings from beef roast
  • 1 to 2 cups water
  • 2 teaspoons beef bouillon
  • 2 tablespoons corn starch mixed with 1/4 cup water
  • salt
  • black pepper

Instructions

  1. Cook the roast beef. See methods in recipe notes below.
  2. Preheat the oven to 450 degrees. Shred the roast or chop into bite size pieces.
  3. Peel and cube the potatoes.
  4. Mix the roast, potatoes, salt and pepper in a large bowl.
  5. Unroll the pie crusts and cut in half.
  6. Put a good amount of filling in each crust, fold over, and seal. 
  7. Place each pastry on a greased cookie sheet. Make a couple of small slits in the top of each crust.
  8. Bake for 15 to 20 minutes or until crust is golden brown. Remove from oven and brush with some melted butter.
  9. Serve with gravy.

For Beef Gravy

  1. Bring ingredients to a boil to thicken, stirring constantly with a whisk.

Notes

  • Cook the roast beef using your preferred method: crockpot (with water and onion soup mix for 3-4 hours on high or 8 hours on low), oven roasting (about 3 hours), or Instant Pot (1½ hours).
  • Use cooked roast beef that is shredded or chopped into bite-sized pieces before combining with potatoes and seasoning.
  • Make the beef gravy from the roast drippings, adding water, bouillon, and cornstarch slurry stirred to thick consistency.
  • Brush the baked pasties with melted butter immediately after baking to enhance flavor and appearance.
