The Donovan's Irish Pasties
Description
This recipe begins with cooked roast beef, prepared either in a crockpot, oven, or Instant Pot, providing flexibility in cooking method and time. The beef is shredded or chopped into bite-sized pieces then mixed with peeled, cubed potatoes and seasoning. The mixture is portioned onto pie crust halves, folded over, sealed, and baked until the crust develops a golden brown color and flaky texture.
Once baked, the pasties can be brushed with melted butter for additional richness. The included beef gravy, made from roast drippings, bouillon, water, and thickened with cornstarch, complements the savory filling when served. The slits in the pastry allow steam to escape, keeping the pastry crisp and avoiding sogginess.
These pasties make for a satisfying meal that can be served warm for lunch or dinner and are convenient for portable meals. The recipe notes suggest various methods for preparing the roast, adapting to available equipment and schedule. The pasties can be reheated and the gravy prepared fresh as needed.
