Description
Throw Together Salad #1 combines baby arugula leaves with halved or quartered beetroot, crumbled feta cheese, and lightly crushed walnuts. The salad remains mostly unmixed until dressing to preserve the texture contrasts. The balsamic dressing consists of extra virgin olive oil, ordinary balsamic vinegar, honey, and seasoning, shaken well to integrate the honey fully. This dressing adds a mild sweetness and acidity that complements the earthy beets and peppery arugula.
The mix of crisp greens, soft beetroot, creamy cheese, and crunchy nuts creates varied textures in each bite. The salad is quick to assemble and works well as a light lunch accompaniment or starter. Substituting walnuts with other nuts or seeds can offer easy adjustments to accommodate preference or availability.
The dressing can be prepared up to three days in advance if kept refrigerated and warmed to room temperature before serving. This allows for convenient assembly anytime within a few days.
Ingredients
- 250 g / 8 oz baby beetroot halved or quartered if they are large, canned
- 120 g / 4 oz arugula arugula) leaves, aka rocket, baby
- 60 g feta cheese preferably Danish, otherwise Greek), or goats cheese
- 3 tbsp walnuts , lightly crushed with your fingers
Dressing
- 2 1/2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (ordinary, not aged or glazed)
- 1 tbsp honey
- 1/2 tsp salt
- black pepper
Instructions
- Combine the Dressing ingredients in a jar, and shake well. You might need a spoon to break up the honey to mix it in properly. Adjust salt to your taste.
- Place rocket lettuce in a serving bowl.
- Scatter over beetroot. No need to toss - because of the weight, it should disperse throughout fairly well.
- Crumble over the feta and scatter with walnuts.
- Drizzle over dressing and serve.
Notes
- Prepare the dressing up to three days ahead; store it refrigerated and bring to room temperature before use, shaking well for best consistency.
- Walnuts provide important texture, but cashews, almonds, or sunflower seeds can be substituted if preferred or unavailable.
