TikTok Lasagna Soup blends the components of classic lasagna into a single pot meal. Ground beef is browned with onion and garlic, then simmered with Italian spices, tomato paste, marinara sauce, diced tomatoes, and beef broth. Broken lasagna noodles cook in the broth, absorbing flavors and softening to tender bites. Ingredients
- 1 tbsp olive oil
- 1 onion diced, medium
- 3-4 cloves garlic minced
- 1 lbs ground beef lean
- 1.5 tbsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp tomato paste
- 4 cups beef broth
- 1 jar marinara sauce Rao's (24 oz)
- 1 can tomato 14.5 oz, diced, juices included
- ¼ cup water
- 10 oz lasagna noodles
- 1 ½ cups cottage cheese
- ½ cup Parmesan Cheese shaved
- ½ cup mozzarella cheese shredded
- 1 cup spinach chopped
Garnish (optional)
- ½ cup cottage cheese
- 2 tbsp basil chopped
Instructions
- In a large sauce pot/dutch oven, heat to medium heat. Add olive oil and heat until fragrant. Add the diced white onion and garlic, saute for 3-4 minutes.
- Add ground beef and mix together. Cook for 4-6 minutes.
- Pour in seasonings and tomato paste. Spread throughout and allow the beef to cook.
- Stir in the beef broth, pasta sauce, water and diced tomatoes.
- Break the lasagna noodles in half and add them to the pot. Ensure they’re covered with liquid. Cover the pot and let boil for 12-15 minutes **depending on what lasagna noodles are used will vary depending on cook time.
- Stir in cheese, cottage cheese, and spinach. Wait a few minutes until spinach wilts.
- Serve warm with a fresh dollop of cottage cheese and basil. Enjoy!
