Tomato and Artichoke Salad with Capers
Report
An elegant dish that takes minutes to prepare and turns the humble tomato into something really special. The great thing about this dish is that it really enhances the flavour of even the most ordinary tomato so you don't need bursting-with-flavour-organic-locally-grown tomatoes - in fact, turning the ordinary store bought tomato into something really special is exactly what this dish does.

Ingredients
- 3 to 4 tomato sliced into 1/3"/0.5cm slices
- 1 tbsp capers or ordinary capers roughly chopped, baby
- Artichoke roughly chopped, tinned, few
- 1/4 red onion finely sliced, Spanish variety
- 1 1/2 tsp salt flakes
- pepper fresh
- 2 tbsp olive oil
- 1/2 lemon , juice only
- 2 tbsp oregano or other herb of your choice, fresh leaves
Instructions
- Lay tomatoes on a plate, slightly overlapping.
- Scatter with capers, artichokes and red onion.
- Scatter with salt and pepper.
- Scatter with oregano leaves.
- Drizzle with olive oil and juice of the 1/2 lemon.
- Leave for 5 minutes so the salt makes the juices of the tomato seep. Do not leave for too much longer otherwise the salt will draw too much of the tomato juices out!
