Tomato Basil Orzo Soup

Savory, light and healthy tomato basil soup with orzo pasta - ready in 30 minutes!

Ingredients
- 2 tablespoons butter
- 1 tablespoon minced garlic
- ¼ cup packed basil leaves finely chopped
- 2 ounce cans tomato sauce
- 2 cups chicken broth OR vegetable broth
- 2 cups heavy cream OR fat free half and half
- 2 cups cooked orzo pasta
- salt and pepper to taste
Instructions
- In a large pot melt butter over medium heat. Add garlic and basil and saute til fragrant.
- Add tomato sauce, broth, and milk. Bring to a boil, then reduce to a simmer and allow to cook for about 10 minutes.
- Stir in orzo and salt and pepper to taste. Garnish with additional basil if desired and serve.
Notes
- We like to serve this soup alongside a grilled cheese for a filling meal.
