Ingredients
- 2 pounds tomatoes ripe (about 4, 900g)
- 1 red onion
For the dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar
- ½ garlic clove minced
- ¼ teaspoon sea salt
- ¼ teaspoon sugar
Garnish
- 1 tablespoon basil finely sliced
- ⅛ teaspoon black pepper freshly ground
Instructions
- Slice the tomatoes into rings, about ¼-inch thick.
- Peel the onion and slice it into ¼-inch thick rounds.
- Lay the tomatoes and onions on a plate, overlapping slightly.
- Stir the dressing ingredients together, then drizzle over the tomatoes and onions.
- Sprinkle the top with the pepper and basil.
