Tomato Paste Pasta Sauce Recipe
Description
The recipe starts by heating olive oil to gently soften garlic and Calabrian chili pepper paste until aromatic and the garlic turns golden brown. Adding tomato paste and salt, the mixture cooks further to caramelize, deepening the flavor and reducing acidity. This concentrated base forms a robust, slightly spicy sauce.
Meanwhile, pasta is cooked in salted water to al dente texture. Reserved pasta water is whisked into the sauce to adjust consistency and allow the sauce to coat the noodles thoroughly when combined. The final toss with pasta results in a glossy, clingy sauce.
Sprinkled with freshly grated Parmesan and garnished with chopped basil, this dish is suited for a flavorful pasta main course showcasing the spicy, savory sauce. Managing the heat by adjusting chili paste lets you control the spice level to taste.
Caramelizing the tomato paste is key to developing depth and avoiding raw tomato bitterness. Serving immediately preserves the sauce's fresh texture and flavor.
Ingredients
- 3 large cloves garlic thinly sliced
- ⅓ cup extra virgin olive oil DeLallo brand
- ½- 1 teaspoon calabrian chili pepper paste brand: DeLallo; depends how spicy you like it; plus more for serving
- 1 .6-ounce tube tomato paste brand: DeLallo
- ½ teaspoon kosher salt
- 1 pound dried pasta such as DeLallo Spaghetti or Rigatoni
- ½ cup Parmigiano Reggiano cheese parmesan, freshly grated
- basil for garnish (optional, chopped, fresh leaves
- water reserved pasta water
Instructions
- Bring a large pot of heavily salted water to a boil over medium-high heat.
- Heat olive oil in a large skillet over medium heat until shimmering. Add the garlic and Calabrian Chili Peppers and cook, stirring occasionally, until the garlic is softened and slightly golden brown, about 2 minutes.
- Add the tomato paste and salt. Cook, stirring often, until the tomato paste is caramelized and dark red in color, about 5 minutes. Remove the pan from the heat.
- Meanwhile, add pasta to the boiling water and cook according to package directions until al dente—reserve 2 cups of pasta cooking water and set aside. Drain the pasta.
- Add the pasta water to the skillet and stir to combine with the tomato paste mixture. Use a whisk to combine the mixture until smooth. Let the sauce simmer over medium-high heat for about 1-2 minutes. Reduce to low heat. Add the pasta and toss until the sauce thickens and coats the pasta completely, about 1 minute.
- Remove the pan from the heat. Add the parmigiano cheese and toss to combine. Serve with extra grated parmigiano, fresh basil leaves, and more Calabrian chili pepper paste if desired. Serve hot. Buon appetito!
Notes
- Caramelize tomato paste with garlic and chili paste to enhance the sauce's complexity.
- Cook pasta in well-salted water until just al dente to ensure proper texture and seasoning.
- Use reserved pasta water to loosen the sauce and help it adhere evenly to the noodles.
- Toss pasta in the sauce over low heat to finish cooking and integrate flavors before serving.
