Turkey Carcass Soup Recipe

Save the turkey carcass from your Thanksgiving dinner and transform it into a delicious soup! This Leftover Turkey soup is perfectly seasoned and full of flavor. It features veggies, noodles, and a savory broth.

Ingredients

  • 3 tablespoons olive oil
  • 3 teaspoons garlic minced
  • 1 onion minced
  • 4 celery diced, stalks
  • 4 carrot diced, large
  • 12 cups water
  • 1 turkey carcass
  • 2 chicken bouillon cubes
  • 2 bay leaf
  • 4 tablespoons parsley minced, fresh
  • 16 ounces pasta noodles of your choice
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat the olive oil in a heavy-bottomed pan or a Dutch oven. Add the garlic, onions, celery, carrots, and a pinch of salt and pepper. Cook, stirring often, for about 5-6 minutes until browned. Then pour in 6 cups of water.
  2. Add the turkey carcass, chicken bouillon, bay leaves and parsley. Add the remaining water and bring the mixture to a boil.
  3. When the soup begins to boil, reduce the heat to low and simmer for 2 hours. After 2 hours, use tongs to remove the meat from the carcass and add it to the soup.
  4. Remove the turkey carcass from the soup and set it aside to cool.
  5. Add the pasta or noodles to the soup and cook until tender.
  6. Remove any remaining meat from the turkey carcass and add it to the soup.
  7. Remove the bay leaves and any small pieces of bones, skin, or cartilage from the soup.
  8. Season to taste with salt and pepper if necessary, and enjoy!
