Ingredients

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 pound ground turkey
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 can crushed tomatoes 28 ounces
  • 1 can Kidney Beans 15 ounces, drained and rinsed
  • 1 can black beans 15 ounces, drained and rinsed
  • 2 cups low-sodium chicken broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until onions are translucent, about 5 minutes.
  2. Add ground turkey to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 8 minutes.
  3. Stir in tomato paste, chili powder, cumin, oregano, cayenne pepper, salt, and black pepper. Cook for 2 minutes until fragrant.
  4. Pour in crushed tomatoes, kidney beans, black beans, and chicken broth. Bring to a simmer.
  5. Reduce heat to low and let the chili simmer uncovered for 30 minutes, stirring occasionally. Adjust seasoning to taste.
