Valentine's Day Rocky Road

A sweet, romantic treat perfect for Valentine's Day, featuring pink Jammie Dodgers, mini marshmallows, and colourful sweets.

Ingredients

  • 140 g Strawberry Jammie Dodgers or any other biscuits/cookies that you like (5oz)
  • 100 g mini marshmallows (2 cups)
  • 4 Handfuls Pink, red, purple or heart-shaped sweets (note 1)
  • 500 g white chocolate (18oz)
  • Small Amount Pink gel food colouring (optional, see note 2)
  • ¼ to ½ Teaspoon oil (only if using food colouring)

To top:

  • Small Handful Leftover sweets
  • 1-2 Tablespoons Valentine's Day cake sprinkles

Instructions

  1. Line an 8x8-inch tin with baking paper.
  2. Chop the Jammie Dodgers into medium-sized chunks and add them to a large bowl with the mini marshmallows. Add your chosen sweets and mix everything together.
  3. Melt the white chocolate. Add the pink gel colouring and the oil and mix well.
  4. Pour the chocolate into the bowl with the dry ingredients and mix well until everything is evenly coated.
  5. Press the mixture into your lined tin. Top with more sweets and Valentine's sprinkles while the chocolate is still wet.
  6. Refrigerate your rocky road for 3 hours until firm then cut into squares and enjoy.

Notes

  • The sweets I used were Rowntree's Berry Hearts, strawberries & cream Drumstick Squashies, Swizzels Love Hearts and Starburst Minis. I used about 30-40g of each.

  • Colouring the white chocolate pink is optional but if you do, I recommend gel food colouring along with the oil rather than liquid. This will help prevent the chocolate from seizing. 
  • White chocolate starts to set quite quickly so it's important to work as fast as you can after mixing it into the other ingredients.
  • Store in an airtight container in the fridge for up to 1 week.
