This vegan baked oatmeal with peanut butter and chocolate is so dang good, it's hard to tell if it's dessert or breakfast.

Ingredients
- 2 banana mashed
- 1/4 cup maple syrup or honey
- 1/4 cup peanut butter
- 2 tsp vanilla
- 2 flax egg or regular eggs
- 3 cups oats
- 1 tsp baking soda
- 1/4 tsp salt
- 3 cups plant milk
- 1/2 cup dark chocolate 1 cup
Instructions
- Preheat oven to 350F and grease a 9X13 inch baking dish.
- In the dish, mash the bananas till well combined and add in the maple syrup, peanut butter, vanilla and flax eggs. Stir till combined.
- To the dish, add the oats, baking soda, salt and plant milk. Stir till there are no clumps and a smooth consistency has developed.
- Top with chocolate before baking.
- Bake in the middle rack for 28-35 minutes. If you want more oatmeal like consistency, bake for less time. You want more of a bar texture bake a bit longer. You can eat immediately or after cooling.
- Enjoy them with fresh berries and bananas.
Notes
- Leftover overs will last in the fridge for 5-7 days.
- You can slice them into pieces and store in a tightly sealed container in the freezer for up to 1-2 months. To prepare, simply reheat in the oven or microwave.
