Vegan Banana French Toast with Caramelized Bananas

This Vegan Banana French Toast uses a batter blending ripe banana, non-dairy milk, flour, maple syrup, and warming spices like nutmeg and a pinch of black pepper to enhance flavor. Bread slices soak briefly in the batter before frying until golden and cooked through. Served topped with caramelized bananas cooked with coconut sugar and non-dairy milk, this gives a sweet, rich contrast to the toast’s tender texture. The recipe yields three servings and includes tips for managing cooking temperature to achieve well-cooked, non-sticky french toast.

Description

The recipe combines ripe banana with non-dairy milk, flour, maple syrup, vanilla, and spices to create a batter that flavors and binds the rustic bread slices. Bread is soaked quickly on each side, then fried in oil on medium heat, cooking 4 to 6 minutes per side to get a caramelized surface while ensuring the batter is fully cooked inside. The balance of sweetness from banana and maple syrup with subtle spice notes produces a nuanced flavor profile.

Caramelized bananas are prepared separately by cooking banana slices with coconut sugar, non-dairy milk, and cinnamon until thickened, providing a sweet, soft topping. Serving includes fresh fruit, maple syrup, and vegan butter to complement the toast.

This dish suits a brunch or breakfast occasion, with the caramelized bananas adding a luxurious element to the tender, slightly crispy french toast. The recipe notes that nutrition is based on three servings, helping with portioning.

Servings
  • 1 Rustic bread sliced, day old, or sourdough

French toast batter:

  • 1 banana small to medium, ripe
  • 1/2 cup non-dairy milk such as almond milk
  • 2 tbsp maple syrup
  • 2 tbsp flour i use unbleached white
  • 1/2 tsp vanilla extract
  • 1 tsp neutral cooking oil generic cooking oil
  • 1/4 tsp nutmeg
  • salt a very good pinch
  • black pepper a very good pinch

Caramelized bananas

  • 2 banana ripe, sliced
  • 2 tbsp coconut sugar or vegan brown sugar
  • 2 tbsp non-dairy milk
  • cinnamon or nutmeg, a good pinch

Instructions

  1. Blend everything under french toast batter and transfer to a shallow bowl.
  2. Heat a skillet over medium heat. Add oil and spread.
  3. Place bread slice in the batter for 2 seconds, then flip and soak for another 2 seconds. Remove the batter and let the excess fall off for 2 to 3 seconds. Place in the hot skillet.
  4. Cook for 4 to 6 minutes per side. If your stove runs hot, cook at medium low heat.
  5. You want to cook the batter really well and caramelize the banana in it but not burn it. If the french toast is not done, the bread will not release from the pan easily. Let it cook another minute or so. Flip and cook the other side.
  6. Place in a serving plate, Add a helping of the caramelized bananas, some fresh fruit, maple syrup and vegan butter and serve immediately.

  1. Combine banana slices, sugar and non dairy milk, nutmeg and a pinch of salt in a skillet over medium heat. Cook until the mixture thickens. about 6 minutes. Stir occasionally. Make a double batch of these to serve on the side or over oatmeal.

Notes

  • This recipe yields three servings, so adjust quantities as needed for more or fewer portions.
  • Cook french toast on medium to medium-low heat to avoid burning and ensure it releases easily from the pan.
