Dijon mustard enhances the tang and complexity. Olive oil is incorporated gradually to enrich and thin the dressing to the preferred texture. This dressing can be used immediately but benefits from resting to allow flavors to meld.
Ingredients
- 1 tofu drained, firm, 16-ounce block
- 1 lemon
- 2 garlic cloves
- 1 tablespoon capers
- 3 teaspoons caper brine
- 1 seaweed snacks roasted sea salt, 0.14 ounce package
- 1 teaspoon Dijon mustard
- 1 ½ teaspoons White miso paste optional
- 1 teaspoon black pepper
- 3 tablespoons olive oil more as needed
Instructions
- Put all of the ingredients in a food processor and process until smooth and the seaweed is well blended. Add oil until desired consistency is achieved.
- Store in an airtight container in the refrigerator until ready to eat.
Notes
- Adjust the amount of olive oil or add a little water to reach your desired dressing thickness.
