Vegan Matcha Cookies

Vegan matcha cookies are delicious, with an earthy, vibrant flavour and a soft and chewy texture.

Ingredients

Dry Ingredients

  • 180 grams oat flour approx. 1.5 cups
  • cup cane sugar
  • 2 teaspoons matcha powder
  • 1.5 teaspoons baking powder
  • teaspoon sea salt

Wet Ingredients

  • 3 tablespoons non-dairy milk
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350℉/176℃ and line a baking sheet with parchment paper.
  2. Add all the dry ingredients to a large mixing bowl and whisk until combined. Then add the wet ingredients and stir until no floury bits remain.
  3. Scoop the cookie batter onto your baking sheet to make 12 cookies. Then bake in your preheated oven for 8-9 minutes. They will be very soft when fresh out of the oven but will firm up as they cool down.

Notes

  •  
  • These cookies keep for 1-2 days at room temperature, up to 4 days in the fridge or up to 3 months in the freezer.
  • Weigh your flour for the best results. Scooping into a measuring cup can compact the flour and you may end up with more than needed. 
  • Use active baking powder. Baking powder that’s been open in the pantry for several months may lose its effectiveness.
