Soft and chewy, dairy-free red velvet cookies with chunks of white chocolate throughout.

Ingredients
- 1 Tablespoon Ground flax seeds + 1 tablespoon of water
- 200 g Dairy-free margarine (¾ cup + 1 tablespoon)
- 150 g caster sugar (¾ cup)
- 100 g soft brown sugar (½ cup)
- 1 Teaspoon vanilla extract
- ~¼ Teaspoon Vegan red food gel (I recommend PME)
- 320 g self-raising flour (2 + ½ cups)
- 1 Tablespoon cocoa powder
- 150 g white chocolate chips or chunks (1 cup)

Notes
- I recommend popping the cookies in the fridge for an hour or two after they've cooled. This helps them to really firm up and get chewier.
- Store in an airtight container at room temperature for up to 5 days.
