Vegetarian Crockpot Chili Recipe

Chili is one of those dishes that is perfect to eat on a cold night, or on Sunday afternoon game days. This hearty version is full of protein-rich beans, veggies and seasonings, and will fill your home with delicious aromas all day.

Ingredients

  • 1 Kidney Beans rinsed, can
  • 1 black beans rinsed, canned
  • 1 corn rinsed, canned
  • 1 cup yellow onion diced
  • 1 cup red bell pepper diced
  • 1 cup carrot chopped
  • 1 cup zucchini chopped
  • 2 cups tomato diced
  • 1 tsp garlic powder
  • 1 tsp cumin ground
  • 1 tsp chili powder
  • 1 tbsp lime juice fresh
  • 1 ½ tsp salt

Instructions

  1. Into a slow-cooker, add all the ingredients except the lime. Stir to mix everything within well.
  2. Close the cooker and cook for 4 to 5 hours on high, or 6 to 7 hours on low, stopping only when the vegetables are tender.
  3. Open the cooker and stir in the lime juice. You can add more salt to taste at this point if you wish. Serve and enjoy!
