Veggie Casserole

I'm always looking for a way to sneak more veggies into my kids' meals. This Veggie Casserole is a game-changer! It's loaded with hearty vegetables and layers of creamy, cheesy goodness.

Ingredients

  • 12 ounce mixed vegetables frozen
  • 12 ounce broccoli florets frozen
  • 2 cups cheddar cheese shredded
  • 2 cans cream of mushroom soup
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2/3 teaspoon onion powder
  • 1 leeve Ritz crackers crushed, about 32 crackers
  • 1/4 cup unsalted butter melted
  • fresh parsley chopped for garnish, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking casserole dish.
  2. Cook the frozen mixed vegetables and frozen broccoli according to package instructions, drain any excess water.
  3. In a large mixing bowl, combine the cooked vegetables, shredded cheddar, cream of mushroom soup, sour cream, salt, pepper, garlic powder, and onion powder. Mix well until everything is evenly coated.
  4. Mix the crushed ritz cracker crumbs with the melted butter in a small bowl until well combined.
  5. Evenly spread the vegetable and cheese mixture into the greased casserole dish.
  6. Sprinkle on the buttered ritz cracker crumbs over the top of the vegetable mixture.
  7. Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  8. Once baked, let it cool slightly before garnishing with chopped fresh parsley. Serve and enjoy!

Notes

  • Use microwavable “steam in bag” vegetables for faster and easier prep.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • You can assemble the casserole a day in advance. Just cover it tightly with plastic wrap or foil and refrigerate. When ready to bake, remove the cover and bake as directed.
  • Add cooked shredded chicken or diced ham for added protein.
  • Feel free to substitute the cheddar cheese with other cheeses like mozzarella or Monterey Jack for a different flavor.
