Ingredients
- 2 tablespoons olive oil
- 1 lb chicken breast
- salt and pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ onion minced
- 5 cloves garlic minced
- ¼ cup vodka
- 6 oz can tomato paste
- 28 oz can crushed tomatoes
- 1 lb penne
- ½ cup heavy cream
- ½ cup Parmesan Cheese

Instructions
- Bring a pot full of water and a pinch of salt, bring to a boil and cook the penne according to the package directions.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. While the oil is heating season the chicken breast on all sides with salt and pepper, paprika, italian seasoning, and garlic powder.
- Place the chicken on the skillet and cook for about 4-5 minutes on each side until the chicken is fully cooked. Remove the chicken from the skillet and set aside.
- Add the onion and garlic to the skillet and sauté in the remaining chicken juices. Add more oil or a touch of chicken broth if needed. Cook until the onion starts to turn translucent. Once done deglaze the pan with vodka and stir for a few seconds allowing the alcohol to cook off.
- Add tomato paste, crushed tomatoes, and heavy cream. Bring to a light simmer and cook for about 3-5 minutes or until the sauce has reduced and thickened. Once done, stir in the penne and top with parmesan cheese and fresh basil
