Waffle Fry Nachos

Crispy waffle fries are smothered in the most delicious, creamy green chili cheese sauce and loaded up with all your favorite nacho toppings in these epic Waffle Fry Nachos!

Ingredients
Nachos
- 22 ounces frozen waffle fries
- ¼ cup tomatoes diced
- ½ Jalapeño thinly sliced
- ¼ cup cilantro fresh chopped
- 1 avocado diced
Green Chili Cheese Sauce
- ½ cup half and half
- 4 ounces cream cheese cubed
- 2 tablespoons butter
- 1 teaspoon salt
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- 7 oz can diced green chilies
- 1 cup Cabot Extra Sharp Cheddar Cheese shredded
- 1 cup Cabot Seriously Sharp Cheddar Cheese shredded
Instructions
- Preheat the oven to 450°F.
- Arrange the waffle fries in an even layer on a rimmed baking sheet.
- Place the waffle fries in the oven and cook for 20 minutes.
- While the waffle fries are baking, prepare the cheese sauce.
- Add the half and half, cream cheese, butter, salt, cumin and garlic powder to a medium pot on the stove over medium heat.
- Stir consistently until the mixture is smooth and creamy, then add the diced green chilis.
- Turn the heat on the stove to low and stir in the shredded Cabot cheddar cheese.
- As soon as the waffle fries come out of the oven, pour the green chili cheese sauce over the fries, then top with the diced tomatoes, jalapenos, cilantro and diced avocado.
Notes
- This recipe makes enough nachos to serve 4-6 people. To make nachos for 2, prepare the green chili cheese sauce, but only cook half of the waffle fries and cover it with half of the cheese sauce. When ready to eat the nachos again, cook the remaining waffle fries and reheat the remaining cheese sauce in a pot on the stove over medium heat. The cheese sauce will stay good in the refrigerator for up to 5 days.
- Do not overcrowd the baking sheet of waffle fries. You want the fries in an even layer so they get nice and crispy, which might mean using two baking sheets. Not to worry, you can always combine the fries back onto one baking sheet after they’ve cooked in the oven and top them with the cheese sauce.
- This recipe is naturally gluten free.
