Walnut Sauce - Salsa di Noci
Description
This traditional Walnut Sauce uses walnuts as the central ingredient, giving a distinctive earthy and mildly bitter nuance that pairs well with pasta. White bread crusts are removed and soaked briefly in milk to soften before processing, ensuring the sauce has a creamy and smooth body without graininess. Fresh cheese combines parmesan for savory umami notes, while olive oil adds richness and smoothness. Garlic provides subtle pungency that complements the walnuts.
The sauce is blended to a thick but smooth consistency that clings well to pasta or gnocchi. When served, reserving pasta cooking water is recommended to loosen the sauce, mixing in reserved water bit by bit to reach the desired creaminess without diluting flavor. This technique balances texture and mouthfeel effectively.
Additional toppings such as chopped toasted walnuts enhance the crunchy contrast, and fresh parsley adds herbal brightness. The sauce also stores well if covered tightly in the refrigerator, allowing for advanced preparation.
Ingredients
- 1.5 cups walnuts (150g)
- ¾ cup milk (150ml)
- 1 lice white bread
- 1 clove garlic
- 1 cup parmesan freshly grated (50g)
- 1 tbsp olive oil
Instructions
- First, cut the crusts off the white bread then place in a bowl with the milk
- Put all other ingredients in a food processor then add the milk and bread (it only needs to soak for a few seconds)
- Blitz everything together until thick but smooth. If the sauce is too thick then add a little more milk
- If tossing with pasta or gnocchi reserve 1 cup (240mof pasta water.
- Once you've drained the pasta add it back to the pot with the desired amount of walnut sauce and loosen it with pasta water as you toss it with the pasta ( you won't need the whole cup).
- Serve with extra topped walnuts if desired.
Notes
- Store leftover walnut sauce in the refrigerator covered tightly with plastic wrap for freshness.
- If the sauce is too thick, add a little more milk gradually to achieve preferred consistency.
- Reserve some pasta cooking water when preparing to loosen the sauce and enhance flavor when tossing with pasta or gnocchi.
- Top finished dishes with extra chopped walnuts for texture contrast.
- Add fresh parsley just before serving to introduce a fresh herbal note.
