This super refreshing watermelon feta salad with mint and cucumber is easy to make and just perfect for warm days!

Ingredients
For the vinaigrette
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 1 tablespoon honey
- salt to taste
For the salad
- 5 cups cubed seedless watermelon
- 1 medium cucumber sliced, about 2 cups worth
- 1/2 cup Thinly sliced red onion
- 6 ounces crumbled Feta cheese
- 10 large mint leaves torn

Instructions
- In alarge bowl, whisk the dressing until combined. Season with salt to taste.
- Place the cubed watermelon, cucumber, and onion into the bowl and gently mix to combine.
- Place the salad onto a platter and top with the feta and mint. Enjoy!
Notes
- A variety of cucumbers can be used. Salad slicer, English cucumber, and Persian cucumbers all work well.
- The salad can be saved in the fridge for up to 3 days. It will release a lot of water, so just drain it the before serving.
