This minty watermelon salad is a light, refreshing combination of watermelon, berries and grapes with a minty, ginger syrup.

Ingredients
For the mint syrup:
- ¼ cup sugar
- ¼ cup water
- ¼ cup chopped fresh mint loosely packed
- ½ teaspoon ground ginger
For the salad:
- 4 cups 1-inch watermelon chunks
- 1 cup fresh blueberries
- 1 cup hulled and halved fresh strawberries
- 2 cups halved seedless grapes
Instructions
- In a small saucepan, combine the syrup ingredients.
- Bring to a boil, reduce heat and simmer for 5 minutes.
- Set aside to cool.
- Place the prepared fruit in a large bowl. Add syrup mixture and toss to coat. Serve immediately.
