  • 4 cups cabbage cut into small pieces
  • 2 quarts vegetable broth
  • 1 tablespoon garlic minced
  • 1 yellow onion chopped
  • 3 carrot sliced
  • 3 celery sliced, stalks
  • 1/2 tsp oregano dried
  • 28 oz diced tomatoes including juice, canned
  • 1/2 tsp basil dried
  • salt to taste
  • black pepper to taste

Instructions

  1. Place a large pot on the stove on high heat and pour in all the ingredients.
  2. Stir a few times and then bring to the boil.
  3. Turn the heat down to low and simmer for 20 minutes or until the vegetables are tender.
