Ingredients
For the Whipped Feta Dip:
- 8 oz feta cheese block (cold) drained and crumbled
- 4 oz cream cheese cold
- 1/2 cup thick sour cream cold
- 2 Tbsp extra virgin olive oil plus more for serving
- 1 1/2 Tbsp lemon juice freshly squeezed (make sure to zest it first)
- 1 garlic clove minced or pressed
- 1/4 tsp fine sea salt plus more to taste
Topping Ideas:
- 1-2 Tbsp EVOO
- parsley finely chopped, to garnish
- Zest from 1 lemon
- red pepper flakes crushed, to garnish
- freshly ground black pepper to garnish
Serve with:
- pita bread
- Pita chips
- Sliced vegetables cucumbers, radishes, bell pepper, small tomatoes
Instructions
- In the bowl of a food processor fitted with a chopping blade, combine all of the feta dip ingredients. Blend on high speed for 3-4 minutes, or until completely smooth, scraping down the bowl halfway.
- Transfer to a shallow serving bowl and swirl the top with a spoon to create grooves. Drizzle all over with extra virgin olive oil, sprinkle on crushed red pepper flakes, parsley, lemon zest and freshly cracked black pepper.
- Serve right away with Pita Chips or vegetables for dipping, or cover and refrigerate.*
Notes
- Make-Ahead Tip: You can make this dip up to 3 days ahead. Cover and refrigerate until ready to serve. It is best to add the toppings just before serving since the olive oil topping can harden in the refrigerator.
