Ingredients
- 1 cup almond butter
- ¼ cup softened butter
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 4 cups crisp rice cereal
- 8 ounces white baking chocolate
- 4 ounces vanilla-flavor candy coating
- 2 teaspoons shortening

Instructions
- Line a large baking sheet with parchment paper or a silicon baking mat. Set aside.
- In a large bowl, add 1 cup almond butter and ¼ cup softened butter. Using an electric hand mixer on medium speed, mix for 30 seconds.
- Gradually add 1 cup powdered sugar and 2 tablespoons unsweetened cocoa powder, beating until combined. Stir in 4 cups crisp rice cereal.
- Shape the truffle mixture into 1-inch balls, place on the prepared baking sheet, and freeze until firm for about 30 minutes.
- In a small bowl, microwave 8 ounces white baking chocolate, 4 ounces vanilla-flavor candy coating, and 2 teaspoons shortening until melted and smooth.
- Using a fork, dip the chilled balls into the melted chocolate and place them on the prepared baking sheet. Chill until firm for about 5-10 minutes.
