This chewy Keto Blondie recipe with white chocolate chips and macadamia nuts is a perfectly delicious cross between a brownie and a cookie!

Ingredients
- 2 cups Super Fine Almond Flour
- ½ cup butter melted
- ½ cup sugar-free white chocolate chips
- ½ cup macadamia nuts toasted and chopped
- ¼ cup monk fruit/allulose powdered
- ⅓ cup brown monk fruit/allulose
- 2 whole eggs room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Instructions
- Preheat oven to 325°F.
- Add the butter, eggs, vanilla and sweetener in a mixing bowl and blend using a hand mixer.
- In a separate bowl, add in the almond flour and baking powder. Whisk to combine.
- Mix the wet and dry ingredients together, just until combined, do not over mix.
- Fold in the white chocolate chips and macadamia nuts.
- Add the batter to an 8 x 8 baking dish lined with parchment paper and spread evenly using an offset spatula.
- Bake 20-25 minutes or until a toothpick, when inserted, comes out clean. Allow to cool completely before cutting into squares.
