  • ¼ cup lemon juice fresh
  • 1 teaspoon honey
  • 2 garlic finely minced, medium cloves
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • 1 tablespoon thyme fresh leaves, roughly chopped
  • ½ cup extra virgin olive oil

Instructions

  1. Cut both ends off of lemon and discard. Thinly slice lemon, discarding seeds as you go. Finely chop lemon slices and place in a small jar with a tight fitting lid.
  2. Add all other ingredients and shake well. That's it, enjoy!

Notes

  • Use organic lemons when possible because the whole lemon, including peel, is used.
  • Remove seeds thoroughly from lemon slices to avoid bitterness.
  • Shake dressing well to combine all ingredients evenly before use.
