This Wild Rice Pilaf recipe is an easy side dish for your next potluck, picnic or dinner. Quick and easy to make in advance it's the best rice pilaf recipe!

Ingredients
- 3 cups wild rice , cooked and chilled
- 1/2 teaspoon kosher salt
- 1 tablespoon extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 cup dried cranberries
- 1/2 cup celery , chopped
- 1/2 cup pistachios , shelled
- 1/2 cup feta cheese , crumbled

Instructions
- In a small bowl, whisk together the olive oil, Kosher salt and lemon juice.
- Toss gently with the cooked and chilled wild rice.
- Add the dried cranberries, celery, pistachios and crumbled feta cheese, toss to combine.
- Serve at room temperture or slightly chilled.
