Ingredients
- 2 lb swordfish , cut into ½ inch (1.5 cm) thick slices
- 3 tablespoons lemon juice , freshly squeezed
- 1 teaspoon salt
- 2 tablespoons finely chopped fresh oregano
- 1 cup extra virgin olive oil
- black pepper , freshly ground

Instructions
- Preheat a grill or charcoal barbecue.
Sauce
- Combine lemon juice and salt in a bowl, until the salt dissolves.
- While stirring, add the oregano.
- Using a hand mixer, slowly add the oil and garnish with plenty of freshly ground pepper. Emulsify and set aside at room temperature.
Swordfish
- Cook swordfish on both sides over high heat until cooked through, about 6 to 7 minutes.
- Place the swordfish in a dish and pierce it with a fork in several places so that the sauce penetrates well into the fish.
- Drizzle with sauce, and serve immediately.
