Xiphias

Ingredients

Servings
  • 2 lb swordfish , cut into ½ inch (1.5 cm) thick slices
  • 3 tablespoons lemon juice , freshly squeezed
  • 1 teaspoon salt
  • 2 tablespoons finely chopped fresh oregano
  • 1 cup extra virgin olive oil
  • black pepper , freshly ground

Instructions

  1. Preheat a grill or charcoal barbecue.

Sauce

  1. Combine lemon juice and salt in a bowl, until the salt dissolves.
  2. While stirring, add the oregano.
  3. Using a hand mixer, slowly add the oil and garnish with plenty of freshly ground pepper. Emulsify and set aside at room temperature.

Swordfish

  1. Cook swordfish on both sides over high heat until cooked through, about 6 to 7 minutes.
  2. Place the swordfish in a dish and pierce it with a fork in several places so that the sauce penetrates well into the fish.
  3. Drizzle with sauce, and serve immediately.
