Yogurt Parfait with Granola

This yogurt parfait features layers of raspberry chia jam, protein-rich Greek yogurt, peanut butter granola, and fresh strawberries, finished with a drizzle of maple syrup. The combination offers contrasting textures: creamy yogurt, crunchy granola, and juicy berries, balanced with the sweet-tart jam. It can be assembled in jars or bowls for a light snack or breakfast.

Description

The Yogurt Parfait with Granola is created by layering raspberry chia jam made from cooked raspberries, chia seeds, and honey, with high protein Greek yogurt and peanut butter granola for nuttiness and crunch. Fresh quartered strawberries add brightness and freshness. Maple syrup is drizzled on top to enhance sweetness. The jam uses chia seeds to thicken without cooking extensively, preserving berry flavors. The parfait components maintain their textures best when the granola is added just before serving to avoid sogginess. It is customizable with different fruits or yogurt types, including vegan options.

This parfait serves as a versatile meal or snack that can be prepared in advance by storing components separately. Adding citrus juice to fruit can prevent browning, and alternative sweeteners like agave or honey can substitute for maple syrup.

Ingredients

Servings
  • 1/4 cup raspberry chia jam
  • 3/4 cup Greek yogurt high protein is best, of choice
  • 1/2 cup peanut butter granola Bob's Red Mill brand
  • 1/4 cup strawberry quartered, fresh
  • 1 tbsp maple syrup

Instructions

  1. This is a really simple recipe and it's so fun to eat!
  2. Start by layering two jars, cups or bowls equally with the jam, then some yoghurt, granola and fresh berries!  Enjoy with a drizzling of maple syrup.

Notes

  • Make raspberry chia jam with raspberries, chia seeds, and honey by cooking gently then cooling; store in fridge up to two weeks.
  • For vegan or different yogurt types, thicker yogurts provide better texture.
  • Add lemon or lime juice to fruit to keep it fresh and prevent browning.
  • To maintain granola crunch, store it separately and add just before eating if prepping ahead.
  • Use agave, honey, or coconut nectar as maple syrup alternatives.
