Ingredients
For the zoodle salad:
- 1 zucchini spiralized, fresh
- 1 oz. can corn
- 1/4 cup cherry tomato cut in half
- 1 oz. can Kidney Beans rinsed and drained, low-sodium
- flat leaf parsley garnish
- feta cheese optional
For the vinaigrette
- 3 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- salt to taste
- black pepper to taste
- 1 lime zest and juice
- 1 tsp. honey use maple syrup or agave for vegan option
- red pepper chili flakes optional
Instructions
- Using a spiralizer, spiralize your zucchini using the smallest blade. Toss together with corn in a medium-large sized bowl. Gently mix in tomatoes and kidney beans.
- In a small bowl, whisk together all ingredients for the dressing. Pour over zucchini/corn and toss until evenly coated. Use parsley and feta cheese for garnish.
